7 spices

So when it comes to whole bird recipes, whether it's chicken, Cornish game hen, or turkey (that isn't being deep fried!), and whether it's roasting, grilling, baking, or rotisserie, I never pay any attention to the spices suggested.

That's because, about ten years ago, I came across a recipe with a recommendation for seven spices for rubbing into poultry. Can't tell you what that first recipe was for. Can't tell you where I saw it. What I CAN tell you is that it was really easy to remember what the seven spices were after tasting that meal because together, they are DELICIOUS!

So here they are:

Cardamom, Garlic Powder, Onion Powder, Nutmeg, Paprika, Salt and Pepper

You pretty much mix them in equal portions (with the cardamom being the smallest) in a bowl with a fork-- then rub it into the poultry of choice-- both outside and in. Then cook as you would.

It's good crock pot rotisseried, but it doesn't crisp in a crock pot-- and they're REALLY good on crispy skin (:


As a side note, if you use spices, you probably have all except the Cardamom already in your cabinet. Cardamom is a bit expensive, but it's DELICIOUS! And no worse pricing than any other 'exotic' spice.
